This brewery is an extension of the renowned Japanese brand DASSAI. Exclusively uses Yamada Nishiki rice, often referred to as the "king of sake rice, Rice polished to 35% of its original size, resulting in a refined and elegant sake. Typically around 14% ABV, aligning with standard sake alcohol levels. Dassai Blue 35 offers a delicate bouquet of white peaches and ripe papayas, complemented by subtle floral notes.
